2 medium onions finely chopped
500g lean mince meat
1 capsicum finely chopped
2 sticks celery finely chopped
2 carrots finely chopped
1 clove garlic finely chopped
2 tomatoes chopped
3 tablespoons tomato paste (no added salt) combined with 1/2 cup hot water
1 tablespoon finely chopped fresh basil (or 1/2 teaspoon dried basil)
freshly ground black pepper
fresh parsley chopped
Saute onion and mince in non-stick pan over moderate heat until the meat browns. Add capsicum, celery, carrots and garlic and stir over heat for 15 minutes. Add tomatoes, tomato paste and water, basil and pepper. Simmer covered for 15 minutes. Add parsley and heat for a further 5 minutes. Serve with boiled wholemeal spaghetti.
